Publix Sale on Pure Cane Confectioner's Sugar starts today

Hello Everyone-

Just a quick note to let you all know you can now use your Domino's coupons on confectioner's sugar at Publix. Today through next Tuesday ( SC locally) Domino's sugar is on sale for .99 cents a box. If you use the .50 cents off two coupons, your net cost on 2 pounds of sugar is .98 cents. Yahoo!!!!

This is also the time to stock up on Nestles Chocolate Chips a 10-12 oz bag is on sale for $1.58 and if you have the Coupons saved from the 9/9 Red Plum or 11/4 Smart Source your chocolate chips will be .58 cents per bag.

South Carolina's New Cottage Food Law for Selling Home Baked Goods

Everyone is asking me about this, so I am posting this so you can investigate it on your own. As you know South Carolina recently passed a Cottage Food Law that would allow some of us to bake and sell items from home. Wilton Stabilized Whipped Icing Recipe.

You cannot decorate with this but, you can use butter cream flowers or decorations on top of this. Cake Class -- Tina B's cake for the SC State Fair.

I wanted to show you all what is possible with a little practice and our Wilton Classes at Michael's. The South Carolina State Fair actually had a new cake class this year called, "Special Techniques not on a Cake". Basically they gave us no ground rules, you could do any technique and put it on a cake board.

Tina B. is a really talented flower maker ( she started in Course 4, Advanced Flowers). This is a photo of her entry for fair this year! This is her first time entering any kind of decorating competition. She won second place in the category, FANTASTIC!

New Wilton Instructor Starts at OC Tech next week

Hello-

If you haven't seen me in a while you probably don't know that I have stopped teaching 4 week classes at OC Tech in St. Matthews. The new instructor is amazing, her name is Henrietta Wilson and she will be starting Course 2: Flowers and Cake Design, this Tuesday night. If you are interested please contact Kim Miller at (803)874-2445 and she can get you registered.  If you want to see me in class again I will be offering a parent child ginger bread class on December 11- contact Kim and she can give you the details.

SC State Fair - Decorated Cake Entries Due Monday!

Hopefully, you have your decorated cakes for the State Fair done by now. Fair drop off is Monday the 8th from 7 am to 10 am. Any later and they won't take your entry.

For those of you entering, please remember to pick up your cakes on the 22nd and 23rd of October between 8am and 6pm. Otherwise they keep them.

If you entered and would like to display your cake at Michael's over the holiday season contact me by email. We will be doing some version of the fair cakes display we did last year, I will be emailing you the particulars with my next monthly email.

Oh my goodness- I am icing my cake and there are crumbs all over it!

The trick to icing a cake with no crumbs is two fold:

 Trick number 1-

Never let your spatula touch actual cake . Put a big blob of icing on the cake and use the flat of your spatula to move it around. As soon as it starts to thin out add more icing. Never let your spatula touch the cake!

Trick number 2-

Use thin consistency icing. If you are unsure about this, check out Wilton's Decorating Basics book page 7. It tells you how to make thin consistency icing. If you are using thin icing already and still picking up crumbs try thinning the icing just a bit more ( like 1 tsp water).

Usually one of these tips will solve the issue of crumbs in your icing!!

This way you don't have to commit to a time for your loved one to take the class - they can take it anytime in 2012 or 2013. All they have to do is give us the name of the person registered for the class and we can put them in the class of their choice.

Cheap Thrill! More Baking Coupons in Todays Paper- Red Plum

Hi Everybody,


Today's Red Plum (September 30, 2012) has a bunch of baking products coupons. Save them now for use during the holidays. Some of the items like Yeast never go on sale so you can start stocking up on it now . You can store it all year in the door of your refrigerator, just let it warm to room temperature before you use it for baking.

Other products like the Karo Syrup and Argo cornstarch will go on sale  before Christmas. You can hold these in your panrty for use all year. Usually they just go on sale for one week between now and Christmas so watch your store flyers for the date. If you go to a store that doubles coupons, like Publix or the Pig and you use that coupon on the sale price ... your baking stuff will be just about free.

As I have told you all before, I use www.couponmom.com to do my weekly shopping  but, any of the couponing sites can help you with your planning.

Cheap Thrills- Plan for Holiday Baking Supplies Sales Today!

As many of you probably have guessed, I am always the Auntie who does all the holiday baking. Plus I have to have things like confectioner's sugar and shortening on a weekly basis for my classes. Many of you may think the cheapest way to get all my baking supplies is to run to the restaurant supply warehouse, or Sam's club and buy in bulk. The truth is the cheapest way to get my baking items is to plan ahead and use coupons!!

Using coupons has the added benefit of letting me buy sugar in container sizes that work for me.I don't have to work at packaging stuff for class because it is pre packaged in the correct size packages.

So here is how I get a huge bunch of baking supplies on the cheap. Last week the newspaper issued the first of the "holiday" baking coupons , " Domino's Confectioner's Sugar 1 lb., 50 cents off ". Obviously I am going to follow the coupon Mom system and keep this coupon until sugar goes on sale- then use it at Publix where they will double the value and give me a dollar off the sale price. ( Last years sale price was $1.19 so I spent only .19 cents per box of sugar).

You probably are thinking hey that's pretty cool except I only buy 1 newspaper so I only have one of these magical coupons. Here is where the planning comes in. Since they issued this coupon last week- I am going to go to Ebay and buy 20 or more of these coupons from a coupon clipping service. I am going to make sure shipping is no more than a dollar! If they ship them Monday I will have coupons by Friday in plenty of time for all the holiday sales. ( While I am at  it I will also look for Crisco and other baking coupons and pick those up too- if you buy two auctions from one person they can combine the items and lower shipping costs for you). Yes I will have spent a little on shipping but, if you factor in the savings using double coupons and the sale you will still come out way ahead. I buy sugar for all of my classes all year in the months of October and November.

Cheap Thrill - Help us win the Publix Pet Photo Contest!! Read on to see why....

Hi Everyone-

As many of you know, I coupon to save our house hold as much money as possible. Couponing has actually helped us keep our heads above water recently. Couponing has also allowed me to help out several other families and family members with groceries and personal items. I also use the coupons to donate to the local animal shelters.

My Butter Cream Icing Recipe for Decorating

Hi Everyone-

I keep getting requests for this - so here is the Butter Cream Icing Recipe I use- it is my personal recipe. The trick is to work with it as cold as possible. If it gets to soft pop it back in the fridge and wait until it is cool again ( if you have it loaded in a bag just stick the whole thing in the fridge).


Butter Cream Icing Recipe

 
6 Tablespoons butter

4 ½ to 4 ¾ cups pure cane powdered (confectioners) sugar

1 Tbsp Meringue powder

¼ Cup milk

1 ½ tsp vanilla

 
In a small bowl beat butter until light and fluffy, gradually add about half the powdered sugar and meringue powder mixing well. Add the milk and vanilla and mix. Then add remaining powdered sugar. If consistency is too thick add more milk & mix, if it is too thin add more powdered sugar and mix until you have the right consistency. This is equal in yield to 1 batch of the Wilton class butter cream icing.

*** Of course if you want to improvise with the flavors you can substitute another extract for the vanilla.

How Much Batter Do I Use to Fill A Pan?

Hi Everyone-

This weekend in class we had a cake come in that was supposed to be a 9 inch square cake with two - 2inch tall layers. Instead when she baked it her layers came out only about 1" tall. Given that she was using the same cake recipe as she had in prior class the problem had to be with the amount of batter she used to fill each pan. Whenever you use a new pan you need to look up the amount of batter it takes to fill the cake pan ( remember, each pan should fill to half full in order for it to bake properly).

It is football season again .. here is the formula for Gamecock Garnet Icing!

Hi Everyone-

As many of you know I am from California.. so I am an adopted Gamecock fan but, I am already getting questions in class about how to make the perfect Gamecock Garnet Buttercream Icing. This is a tip from Kim A. , the evening instructor at Michaels on Harbison.

For Gamecock Buttercream start with white butter cream icing and add a large amount of Wilton Burgundy Color. Once the burgundy is mixed in add a small amount of brown. Remember to let your icing sit for a few minutes to make sure you have just the right "Garnet" for your creation. Remember earlier posts on this blog have great recipes for butter cream icing!

Summer Cupcakes
June 24th, Sunday 1-3 Pm
This class is a one session project class where we will learn to make S’ Mores and Ice Cream Cone Cupcakes. Class is open to anyone- you will go home with a dozen decorated cupcakes. Tuition is $15.00.

July Classes:
Tuition is ½ off- 4 week classes if you sign up before July 23rd ($22.50).


Sunday Classes start July 1st and continuing on the 8th, 15th, 22nd.

Flowers and Cake Design- Course 2
1:00-3:00 Pm
This class is open to students who have taken Course 1 ONLY. In this class we learn to work with Royal Icing to make beautiful flowers!

Decorating Basics – Course 1
3:30-5:30 Pm

This is the basics class. We learn to use butter cream icing to cover and decorate a cake.


Thursday Classes start July 5th and continuing on the 12th, 19th and 26th:

Flowers and Cake Design- Course 2
10:00 Am- 12:00 Pm
This class is open to students who have taken Course 1 ONLY. In this class we learn to work with Royal Icing to make beautiful flowers!

Gum Paste and Fondant- Course 3
1:00 Pm- 3:00 Pm
This class is open to anyone. We learn to use Gum Paste and Fondant to make beautiful flowers and cover a cake.

Project Classes

These are one time classes that allow you to learn skills you did not learn in Course 1-4.

Kids Cupcakes
Tuesday July 10th
10:00 Am- 12:00 Pm

This is the kid’s version of our Summer Cupcakes class. All kids are welcome. Children under age 14 must be accompanied by a parent. We will learn how to make S’mores cupcakes and an Ice Cream cone cupcake. Tuition is $15.00.

Fair Cakes
Tuesday July 17th
10:00 Am-12:00 Pm

This is the class that will teach you how to design and cover your decorated cake for the State Fair. Cakes are done on Foam core and not real cake, this class will teach you the tricks to covering, cutting, and designing your cake for the fair.  I will also help you enter the correct category and answer any questions regarding decorating cakes for the fair. Tuition is $20.00.

Gum Paste Sculpting
Tuesday July 31st
10:00 Am- 12:00 Pm

This class will teach you the basics of sculpting small animals and cake toppers for your cakes using Gum Paste. No cake experience is necessary. Tuition is $20.00.

Sweetcakes- Advanced Gum Paste Flowers Tip

I always say I learn more from my students than they learn from me and in this weeks Advanced Gum Paste class we all learned something new:

Do not paint your flowers using water and Wilton colorings if you are on South Carolina Well Water!!

The results of painting with South Carolina well water are the same as making butter cream icing using well water-- IT DOES NOT WORK!! As many of you know the iron in our well waters will cause butter cream icing to separate,  and we learned this week that painting with this water will leave orange iron stains on your beautiful flowers!!!!

I don't know if this holds true anywhere else in the world but, for us it does.

Sweetcakes: First Birthday Cake Since Cancer

This is the simple Fondant Cake that I made for Erin & Courtney's Birthday. We celebrated them both on Easter since Oscar and I were unable to travel and visit them on the day of their birthdays. This is another cake I had lots of help with - I taught Courtney, Katie and Haley (my nieces) to make the Gum Paste Flowers and we knocked them out as a team. They were also kind enough to help me cover the whole giant cake with Fondant. Katie completed the entire ruffle border herself along with the pretty gray flower ( and it was her first time cake decorating - she is sooo talented!).

The cake was a huge Red Velvet Cake with cream cheese icing. It is a bit wonky because we had an icing "incident" Easter morning. I was still proud of it-- my first whole cake since my Cancer diagnosis. Without all the help I am sure I never would have finished the whole thing....

Well here is what I did! Or I should say what we did, Katie and Patti really did the bulk of the cutting and slicing here. I still don't have the full use of my fingers but, I designed and dyed all these little guys. Plus the deviled egg recipes were all my own ( Bacon Deviled Eggs & Ranch Deviled Eggs). We actually dyed the egg whites here to make our little Roosters and Owls.

Michaels Open House - May 19th 1-3 Pm

You can come visit and learn all about our classes plus they are running a 50% off special on all Wilton classes.  I will be there to answer any questions you might have. Hi Everyone,

The dates for the new coupon class are now posted on my blog- under the tab " Coupon Classes". My next class is at Richland County Public Library on June 30th from 10:30-12:00 at the Northeast Regional Branch. You must contact them at (803) 736-6575 to reserve your space--- class is completely free!!  I have saved almost 10,000 dollars on groceries and personal care supplies since I started this program 3 years ago and I can teach you how!!

Finally, I have the schedule for the Orangeburg Technical College  Flowers and Cake Design- Course 2 class coming up in June. This class starts June 5th at 6 pm. June Classes are now on the blog- 3 new project classes!!!

Hi Everyone-

It is almost Summer! Time to plan to take some new Wilton Classes. The June schedule is on the blog and sign up sheets are at Michaels on Harbison. If you sign up during the Month of May for June classes you can take advantage of the $10.00 tuition special on Decorating Basics. I have also added a three new project classes for you to enjoy: Tall Cakes, Summer Cupcakes, and Cake Pops.

And remember, I can teach any project class you request as long as I have a minimum of four participants!

First Cheap Thrill - post cancer!!! Save on Cake class....

I am finally back to almost normal, whatever that is after you have had Stage 4 cancer!!! And this means I will be posting both cake and couponing/ savings blogs! So the tip for today is if you know anyone who wants to take Wilton Decorating Basics class have them go register for class NOW. For the first time ever, Wilton is offering Basics class at Michaels for $10.00 tuition. You can sign up now and join me for class in May or June- just go over to Michaels on Harbison Blvd.  and register.

Recently someone asked me " What Wilton Project Classes do you teach?".

Hi Everyone-

I finally feel well enough to get the blog up and running again. The cancer has given me a break and I am getting better every day. So I will be blogging as often as I can. As of today, I have posted the times for May/ June classes. I will be posting photos, recipes, and more new information as the months go along.
