Cake Class - Cookies & Cream Cupcake Recipe

Hi Everyone-

Sorry I have not been blogging , those of you who know me know I have been a bit under the weather. If you are on the blog looking for the May schedule , I should have it posted by tomorrow for everyone. In the meantime, I thought you all might enjoy one of my favorite simple cupcake recipes: Cookies & Cream.



Cookies & Cream Cupcakes


Start with 1 dozen cupcakes either Vanilla or Chocolate.

For the Filling:

7 ounces ( 1/2 bag) Wilton White Vanilla Candy Melts
1/4 cup plus 2 Tbsp Whipping Cream
4-5 Oreo Cookies pulverized

Chop candy melts into small pieces, use a food processor if you like. Then heat the whipping cream in a sauce pan on medium heat until it is just about to boil.  Remove from heat and add chopped candy melts a few Tbsp. at a time. Stir until smooth and glossy , if mixture is too thick for filling  cupcakes you can at a few more Tbsp. whipping cream at this point. Then add the Oreo cookie crumbs and stir to incorporate.

Cut a well in your cupcakes using the medium Wilton Circle Cutter and fill with the cookies & cream mixture.

For the Icing :

1 Batch Class Butter Cream Icing or a can of Wilton Decorator Icing.
4-5 Oreos pulverized really finely ( remember these need to flow smoothly through a decorator tip!)

Mix the cookies into your icing . To ice simply load into a bag and make a tall swirl with either a 2D or large start tip.

Once Cupcakes are iced you can add candy footballs if you like.

This recipe will make 12 cupcakes.
