Pound Cake
1 Cup Butter
4 eggs
2 cups all purpose flour
1 Tsp. Baking Powder
1/4 Tsp Salt
1/4 Tsp Ground Nutmeg
1 Cup Sugar
1 1/2 Tsp. Vanilla
Bring all ingredients to room temperature. Grease and flour a 9 x5x3 inch loaf pan. Stir together flour, baking powder, salt and nutmeg. In large mixer bowl beat the butter on medium speed for 30 seconds. Gradually add the sugar beating until fluffy ( about 6 minutes). Add the vanilla. Add the eggs one at a time beating 1 minute after each egg, scraping the bowl down frequently. Gradually add the dry ingredients beating on low until just incorporated. Turn the batter into the loaf pan. Bake in a 325 degree oven for 55 to 65 minutes or until done. Cool on a wire rack for 15 minutes then remove from the pan.
Makes 12 servings.
*** If you want to do a standard two pan 9” round cake double the recipe and shorten the cooking time—the cake is done when a toothpick comes out cleanly from the center.
