Cake Class - My favorite "Busy Day Cake" recipe- simple!

Hi Everyone-

Busy Day Cake with a 15 minute decorative icing!

As most of you know Sunday is my busiest day! So in honor of that here is a recipe for the simplest scratch cake I know. This is just as easy as a box mix and yet it is done from scratch. It does not take any longer to make it either. A perfect white cake for class!!

Busy Day Cake

3 cups all purpose flour

1 1/2 cups sugar

4 tsp. baking powder

1 1/2 cups milk

2/3 cup shortening

2 eggs

3 tsp vanilla

1/2 tsp salt

Preheat oven to 375 degrees.

Grease and lightly flour two 9” round baking pans, and set them aside.  In a large mixing bowl combine all the ingredients. Beat with an electric mixer on low until everything is combined. Then turn the mixer to medium and beat for 2 full minutes. Bake in a 375 degree oven 25-30 minutes or until a toothpick comes out clean. Serves 9 people.
